The Sunshine State

I have been told..."Jasmine you don't know where you are going until you actually arrive there!!" Ummm..Basically saying my sense of direction is clearly lacking focus. Welll...I am going to Le Cordon Bleu in April as planned but instead of Scottsdale, Arizona...I am heading to Orlando, Florida!! I am still very excited on my journey to becoming a Pastry chef...so now I will be in HUMID Florida oppse to HOT Arizona! :-)

Because this Mindy Cake right here..is the TRUTH!!


Thanks to everyone for their constructive criticism on the layout of the blog. I made some major changes...umm I guess I ODed on the background pic of myself!! (But can you blame me..Hehe) I know everyone is over me moving around the country like an aimless Gypsy, but its me..I am who I am! Jasmindy the Gypsy!!  I want to share what's next on the agenda. Sooo, I am going to take this baking thing and Mindy Cakes to the next level. I am moving to Arizona in a little over a month to attend the prestigious Le Cordon Bleu College of Culinary Arts. I am doing a year long program to receive my certification in Baking and Pastry Arts. Everyone knows my cooking skills are SUSPECT but I bake as it is a Blessing from God!! I am excited...aren't all of you? :-)

My friends and family (especially my Big Brother & Sisters) always encourage me to go all in! Reason being: Mmmmmm This Mindy Cake right here..is the Truth!! (As I have been told a trillion million times..you know I tend to exaggerate but you get the picture)

Here are a few pics from my first event, Los Angeles' Taste of Soul in 2010...Mindy Cakes sold out in 2 hours! It was a great, stressful, sleepless, successful event! A million thanks you to Kasha & Tamika for helping set up and sell all those cupcakes!!! I really REALLY could NOT have done without their help. (I was sleep walking after making 150 cupcakes in 2 days) Also to all my wonderful friends in L.A. that stop by to show their support!

A SPECIAL ENORMOUS THANK YOU to my mother for helping me start-up my business. She financed my Beautiful Baby Blue Kitchen Aid Mixer and all my supplies to make this event happen. My mom always encourages me and believes in my gift even when I am ready to drop kick the damn mixing bowl because I am O-V-E-R- IT! LOL..sleepless nights of baking can make you feel defeated at times. BUT then the abundance of "OMG this is sooooo freakin good" praise showers down and I forget all about being sleep deprived. At those moments I am so very thankful that my mama is not the only one who thinks this cupcake or cookie RIGHT HERE  is the truth ;-)
